If you do nothing else, make this cake!

Remember when I showed you the candy cake that I had found blog stalking and I made for The Boy’s birthday party? Well, I just looked back and realized I totally forgot to show you the other cake I made for the party too.  Same basic principle, but a much different outcome.
This cake was so, so good. And so, so easy to make.

What you will need:
1 box of lemon cake mix
2 cans of butter cream frosting
1 package lemon flavor wafer cookies
1 jar lemon curd
1 pint fresh blueberries
ribbon (optional)
Grease and flour two 9” round cake pans. Mix a box of lemon cake mix (believe me, it’s right there on the self, in the store,  right next to the chocolate and yellow cake mix boxes), pour into the cake pans and bake according to the directions on the box.
After it is baked and cooled, place one cake round on a platter and brush the top with a bit of heated lemon curd (this is like a lemon jam used by those wacky English folks on their scones and biscuits and such—check your jam or international aisle in your supermarket—to heat, just stick the jar in the microwave sans lid, for about a minute). Frost over the lemon curd with some butter cream frosting (yes, from a can) then top with the other cake. Then frost the whole cake (top and sides) with the rest of the butter cream frosting…this took roughly 2 cans. The huge bonus is it doesn’t have to look pretty because you are covering up the whole thing! Score!
Next thing you need to do is get some, yes you guessed it, lemon wafer cookies (who knew they made these cardboard cookies in flavors other than chocolate, strawberry, and vanilla?) and stand them upright to cover the sides of the cake. You can tie a pretty bow around them like I did, but you don’t have to—they stay in place pretty well.
Finally, take a pint of fresh blueberries and spread them all over the top of the cake. Remember that lemon curd? It’s still warm, so go ahead and glaze your blueberries with it. Yes, that’s right, dump it all over the top of the cake and coat those berries.
All that’s left is to slice and enjoy. (Although, take the ribbon off first.)

  1. Mmm, this sounds like it could be good. I'm hosting a bridal shower in a few short weeks and this might do the trick for dessert.
